Kim Wong, a Clarksdale legend, founded Kim’s Food Processing Plant after discovering the tasty potential of pork skins that were once tossed out as scraps. What began as a kitchen experiment quickly turned into a booming business. With encouragement from customers and support from the USDA, Kim packaged his pork cracklins—and the rest is snack food history.

Later, listening to customers’ health concerns and religious dietary needs, Kim introduced chicken cracklins—now the company’s most popular product. These crunchy bites have become a Southern favorite, proudly made in the Mississippi Delta.

In 1997, Kim passed the torch to his son, John Wong, who, alongside his wife Holly and her family, has grown the company to new heights. Despite challenges like a major fire and the impact of COVID-19, the family’s dedication never wavered. Today, Kim’s products line shelves in cities like Memphis, Atlanta, and beyond—no flashy advertising needed, just word-of-mouth and bold flavor.

Even in retirement, Kim remains a vibrant part of the community. Known for his decades of martial arts classes at Clarksdale Baptist Church, his passion for health and helping others is as strong as ever.
