Clarksdale, Mississippi – On October 23, 2024, Lyon Elementary School teamed up with the Mississippi State Coahoma County Extension Office to celebrate Childhood Nutrition Month by offering a special class for parents, local educators, and staff members. The program, hosted by nutrition educator Kellie Burke, provided practical tips on how to make food more nutrient-rich and improve family meal planning.
The highlight of the event was a cooking demonstration where Kellie taught the class how to make a healthy spring roll dish. During the session, attendees had the opportunity to ask questions and voice concerns about their own challenges with healthy meal preparation. Kellie emphasized how small changes in food choices and preparation can lead to significant health benefits for families.
One of the key topics she discussed was the impact of common household snacks, such as ramen noodles, on children’s health. “It isn’t the noodles themselves that cause sickness,” Kellie explained. “Did you know that one block of noodles is actually two serving sizes? It’s the extra sodium and portions that many of us unknowingly serve to our children that contribute to hypertension and other health issues.”
Kellie also provided advice on the benefits of cooking at home. “Not only is it good for your physical wellbeing,” she shared, “but sitting at the table with your children is beneficial for their mental and physical health.”
The Mississippi State Coahoma County Extension Nutrition Education program offers various cooking classes throughout the county and provides mobile services for organizations or individuals interested in learning more about healthy eating.
